My Vegan Sukuma Wiki
Well, I went to Presidente Supermarket near Miramar Parkway and 27th Ave (University Dr.) to get the ingredients I needed for my rendition of Sukuma Wiki.
I bought Collard Greens, Vidalia Onions, Kale, Garlic, and Tomatoes. I had complete seasoning, extra virgin olive oil, pink Himalayan salt and Cajun seasoning powder. These are all I used for my African dish.
The Collard Greens(Greens) and Kale were boiled for thirty minutes, putting the Kale in first fifteen minutes and then put thinly sliced Greens. They were drained and set aside.
The pot I used to cook all together was first used to sautee the garlic and onions in the 1/4 cup of oil but did not let them get brown.
Then the thinly sliced Green Peppers and Tomatoes were added. I took the sauteed veggies and set them aside in a bowl. In the pot I used to mix cooked ingredients together I put two spoon full amounts of sauteed veggies then a layer of Greens and Kale over it.
Kept layering up til all was in pot then mixed it up over medium heat. Checked to see if Kale and Greens were to my al dente liking.
